Brazo de Mercedes
1 cup eggwhites, 1/8tsp cream of tartar, 3/4cups sugar
Line 1/2 sheet pan with parchment paper. Lightly brush with vegetable oil. Set aside.
Whip eggwhites with cream of tartar until soft peaks form. Add sugar gradually and beat until stiff and glossy. Spread evenly into prepared pan. Bake at 350 until golden brown on top. Loosen edges.
Flip over another oiled parchment paper. Fill with yema... Roll as for jelly roll.
Yema:
1can condensed milk, 4 yolks
1/4cup evaporated milk. zest of 1 lime
Combine all ingredients and cook in a non stick pot until it is a thick paste. Cool.
